Wink white lard looking stuff on C/C legs??

I've always wondered what the white smeary stuff on the fronts of C/C horses legs is? Is it lard? Sweat? Drool? It seems silly to ask, but what the HECK is that stuff??

I asked that question a while back, when I first saw it, I was thinking man, that must a nervous horse sweating like that right out of the box.
Then our second thought was Crisco! Which is very close!
