You are never guaranteed color when breeding paints..the only way you can be is if you breed to a homozygous stallion.

What "color" exactly? Tobiano? Frame?

Your mare looks to be a (nearly) maximally expressed Sabino plus Splash. The max Sabino will make it a little more difficult, though certainly not impossible, to get (more) dark color on a foal. But just as not-impossible is a foal who has very little white anywhere - depends on what exactly is causing all her white.

Your ONLY guarantee of a pattern in to breed to a homozygous Tobiano. But even then, depending on what else the stallion has going on, and depending on exactly what's going on with your mare, you could still end up with a mostly white foal.

You have no guarantees breeding to a Frame.

As for the black - what color is your mare under all that white? I can't tell if she is bay or black. If she's black, then to guarantee black you'd need a homozygous black stallion. If she's bay, there is no guarantee of black. You could at least guarantee bay OR black by using a homozygous black stallion.

I'd say your best bet is to find a nice paint that is homozygous for black and homozygous tobiano. What would you like to get from her next foal? Any particular disciplines in mind? I can see she needs a stud with a longer, thinner neck and a nice shoulder to improve hers, but are there any flaws of hers that you would personally like to improve upon?

Hubba hubba I like him, and he looks like he could both halter and ride. I like the looks of his foals, too. Has either he or your mare been tested for OLWS though?

Ok, the fact that she's had a sorrel means she is not homozygous black, so if your goal is black (behind a well-conformed foal ) then the stallion needs to be homozygous black to rule out chestnut, and needs to be black himself (not just a guess, genetically proven to be black) to avoid a possible bay.
