Patterns on this Mini?

That is DEFINITELY splash, and yes it is definately much more common than people think.

While these two horses look like just sabino, they are most definitely splash. (first two are the same horse)

Well in part you are right. Splash is not that common in many horse breeds... but it is VERRRRY common in Minis.
