Well, you might not want a muffin from this batch. I got a little too carried away with the pumpkin and although they are done, they don't appear to be! LOL HA HA HA HA The batter seemed too stiff so I added a little more and that's what always gets me into trouble. They were raising soooo nicely, then FELL!! HA
I've just been using a banana bread recipe and substituting my squash (from my garden) for the pumpkin with added spices (nutmeg, cinnamon, ginger). Then I maybe throw in some raisins (softened in water in the micro) and some chocolate chips (hubby likes them that way) - cut back on the sugar. You see, I'm to that stage where I don't always follow a recipe. Just like my mom used to do. When I was first starting to learn how to bake/cook that would drive me crazy. How do you know how much to put in/use of an ingredient I would ask. She would just tell me, "She knew". That was a lot of help, I tell ya!! LOL
So, you think my presp. may be mixed up, huh? I may give her a call and ask. This is going to drive me nuts. An eye strain headache is not my idea of a good time.
Thanks for the laugh. I'm sitting here trying to get used to my new glasses - first pair of bifocals. I think I just traded one problem for another. My near vision is still good but I need far correction. The way these lenses are configured, there is so much blurr on the sides, and I end up looking underneath them to see close up otherwise I'm bending my neck waaaaayyyy too far down. I think I'll be making a trip back to the eye clinic sooner than later. She said to give them three weeks. I think being dizzy for three weeks sounds like not much fun!! Always something. LOL
Hope you are feeling better each day. I saw your account of sinus surgery in a thread and WOW have you been through the ringer. I'll surely pray for healing for you.
I have a batch of pumpkin muffins in the oven. Why don't you come over and have one with me? Just hop on that private jet and zoom on in - better yet, use your helicopter and land right in the middle of the yard. Our driveway is blocked with snow again this afternoon - we need four wheel drive to get in and out inspite of my hubby blowing it out this morning about 7:00 a.m. Winter - bah humbug! LOL
I sounds like my plans for Christmas are pretty much like yours! LOL This cold, stormy weather doesn't make one feel much like planning anything. For all I know, my hubby will be out making sure others have electricity to cook their Christmas turkey, or is it goose? LOL
I'll keep that "thingamagoo" in mind. We don't have a Walgreen's around here yet anyway. I think Willmar is getting one soon. Maybe Walmart would have it? They have everything, don't you know? LOL Hope you are feeling better today. Hugs, Pat
