isn't that funny! I wonder why she is fine now? What changed?
I have no idea! I was just patient with her one day, and then the rest of the days after she was perfect. Today I got up first try, no biting/head flailing or anything.

We made sure to rule out any physical issues first (saddle that pinched, sore back, etc).
Yep...saved me some typing here, as this is what I do.

I haven't read all the posts, so this has possibly already been suggested.

I would bring her right up by a fence, and put a mounting block or hay or bucket (anything) on the other side. That way she can only go forward or back. Then I would get on her gently. The most important thing is to not let it leave a bad impression on her, because it sounds very possible that she has already had a bad experience. But even if she has had a bad experience, there is no excuse to let her continue to get away with this. You might have to 'baby' her (kinda like on your second ride), to get her confident again.

Is it possible that when she was acting up she might have been in her cycle?

Yeah, I thought about the fact that she could've been in heat.. but she was perfectly fine on the ground. And she didn't really act like it.. even though that's not always the case.
