Question Corn bread recipe?

I got some polenta the other day. Now I want a GOOD cornbread recipe. All the ones I have tried before have been a bit stodgy.

Who has one?

HAHA I buy a 5 lb bag of Marie Calendar's cornbread mix....just add water, mix and bake. BEST stuff I've ever had HAHA I love it

You could try looking on www.foodnetwork.com they have lots of recipes for things and I'll bet tehre's one there

I don't care for sugar in my cormbread so I make a traditional "Alabama buttermilk" style cornbread.

Okay, let me see if I can give you my recipe...when it comes to measurements...I just "eye-ball it" myself.

1 cup self-rising cornmeal
1/3 cup self-rising flour
1 egg
1 cup buttermilk

Mix the cornmeal and flour together in a big bowl, beat the egg and add it, then mix in the buttermilk.
Next pour the blended mixture into a greased heated iron skillet. (Mine is 8 or 9 inches)
Then I bake in the oven at 350 degrees F until golden brown.
Remove from oven, shake to loosen the cornbread from skillet, then turn out onto a plate.
ENJOY!

1 C corn meal
1 C all purpose flour
1 Tblsp baking powder
MIX dry ingred together
Add:
1 C milk
1 egg beaten
1/4 C olive oil

Mix till blended well and pour into a greased 9 by 9 inch pan. Pour mixture in and bake at 425 for 20- 25 minutes. Smother with butter and honey - serve with chili and watch it disappear

What is polenta, chester?


Anyone have the recipe where you put cream corn as an ingrediant?

My friend made it once and it was so moist and had a great flavor.

But, she lost the recipe

Here is my recipe for corn bread

1 cup flour
1 cup cornmeal
1/4 cup sugar (could be omitted)
1 TB baking powder
1/2 tsp. salt
Mix together and then add:
2 eggs
1 cup milk
1/4 cup oil (in a pinch I've used melted butter, yum!)

Pour into a greased 9x9x2 pan, (I always double the recipe and make in a 9x13 pan). Bake at 425 for 20 to 25 minutes or until golden brown.

This comes out nice and light, almost cakey, not dense and grainy like a lot of cornbread I've tasted. So good hot out of the oven with real butter and honey!

This is on the menu for this week, beans and cornbread. I love navy beans simmered all day with some ham hocks or ham.
Variations: 1 cup shredded cheese, cheddar or pepper jack is good. Can also add 1 4oz can (drained) of diced green chilies or jalapenos.
