I got some polenta the other day. Now I want a GOOD cornbread recipe. All the ones I have tried before have been a bit stodgy. Who has one?

I don't care for sugar in my cormbread so I make a traditional "Alabama buttermilk" style cornbread. Okay, let me see if I can give you my recipe...when it comes to measurements...I just "eye-ball it" myself. 1 cup self-rising cornmeal 1/3 cup self-rising flour 1 egg 1 cup buttermilk Mix the cornmeal and flour together in a big bowl, beat the egg and add it, then mix in the buttermilk. Next pour the blended mixture into a greased heated iron skillet. (Mine is 8 or 9 inches) Then I bake in the oven at 350 degrees F until golden brown. Remove from oven, shake to loosen the cornbread from skillet, then turn out onto a plate. ENJOY!

What is polenta, chester? Anyone have the recipe where you put cream corn as an ingrediant? My friend made it once and it was so moist and had a great flavor. But, she lost the recipe

Here is my recipe for corn bread 1 cup flour 1 cup cornmeal 1/4 cup sugar (could be omitted) 1 TB baking powder 1/2 tsp. salt Mix together and then add: 2 eggs 1 cup milk 1/4 cup oil (in a pinch I've used melted butter, yum!) Pour into a greased 9x9x2 pan, (I always double the recipe and make in a 9x13 pan). Bake at 425 for 20 to 25 minutes or until golden brown. This comes out nice and light, almost cakey, not dense and grainy like a lot of cornbread I've tasted. So good hot out of the oven with real butter and honey! This is on the menu for this week, beans and cornbread. I love navy beans simmered all day with some ham hocks or ham. Variations: 1 cup shredded cheese, cheddar or pepper jack is good. Can also add 1 4oz can (drained) of diced green chilies or jalapenos.
