Either keep them in during the day and out at night or put a sheet on. I'm sure someone else knows some tricks

Day sheets & a sleazy. Spray sunblock does wonders as well.

If your barn/stall is not well ventilated and signifficantly cooler than the outside temp I wouldn't keep him in during the day - I'd spray sunblock on and let him be outside where it's cooler.

Fly sheets or skrims, usually shouldn't be left on all day when it is hot weather. They make a spray on sun block for horses that feels like show sheen. It works wonders and doesn't gunk up the coat.
With show horses, we would only turn them out up to 10 AM and after 4 PM.

It's not temp. that's going to fade the coat it's direct sunlight and the rays it gives off.

Yes there's still UV rays given off with a cloud layer -- if your horse is used to ample turn out and being out "X" amount of hours per day, I wouldn't take that away and throw him in a stall. There's only so much you can do to prevent fading and IMO it's not worth risking an animal's happiness and sanity. I'd invest in a bottle of Healthy Hair Sunflower spray, a lightweight day sheet, and allow him out.

You can go the route of Black as Knight (or just give paprika) but keep in mind it CAN test + on drug tests with certain show associations.
